Earlier this fall, some members of the HealthyFarm team visited Mr. Loi at his beautiful farm in Cam Ne, Vietnam.
During the visit, Mr. Loi and our team discussed operations and marketing efforts for his farm cooperative, which produces clean, safe produce.
Mr. Loi also shared some of his favorite healthy recipes with us. One of them was this delicious and aromatic recipe for a traditional soup featuring Katuk, a local leafy vegetable, and shrimp.
- 300g Katuk leaves
- 300g medium-sized Sugpo prawn
- Dried onion, garlic, pepper, chili powder and spices to taste

Chop the onions and the garlic; peel off the shrimp shell and remove the tail and the head. Mix shrimp with minced onions, garlic and spices, continue to mince the mix then roll it into small balls.
Wash and lightly crush the leaves. Then you can start to cook. Fry minced garlic and onions with cooking oil and add a little chili powder. Put in as much water as you wish. Then add the shrimp balls into the boiling water and wait until it’s done. Keep the mixture on low heat.
When the shrimp balls are fully cooked, add the katuk leaves and boil for 3 minutes. Turn off the heat, and add spices and a little black pepper. Your delicious katuk soup with shrimp is ready to enjoy!
